All Grain Beer Recipes

All-grain beer recipes enable you to brew your own beer at home. The brewing steps are simple and easy to follow. Choose a malted grain. Soak it in hot water. Add more hot water to create a wort. Pour off the wort and use it create your brew. You can choose the type of malted grain you want to use. Different grains will create different types of beer.

Collecting Your Ingredients

Different grains will create different forms of beer, including ale, pilsner and lager. The following lists of ingredients will brew about 3 gallons of all-grain beer. When you have had some experience with a few recipes, consider making up your own. It is important to use very clean equipment when you are brewing beer and working with the fermentation process. Be sure to sterilize all of the equipment you will use before you begin the brewing process.

Scottish Ale

  • 7 lbs of pale malt
  • 1 ½ lbs crystal malt
  • ½ oz Styrian Goldings hops
  • 1 tsp. Gypsum
  • Scottish ale liquid yeast

Pale Ale

  • 7 lbs pale malt
  • 1 lb crystal malt
  • 1 1/2 oz Crystal hops
  • 1 tsp gypsum
  • American Ale liquid yeast

Stout

  • 5 lbs pale malt
  • 1/2 lb toasted malt
  • 1/2 lb chocolate malt
  • 1/2 lb roasted barley
  • 1-1/2 lbs crystal malt
  • 1 oz Kent Goldings hops
  • 3/4 lb lactose sugar
  • 1 tsp gypsum
  • Irish Ale liquid yeast

Belgian White

  • 3 lbs unmalted wheat
  • 1 lb flaked oats
  • 4 lbs pilsner malt
  • 1/2 oz Kent Goldings hops
  • 1 oz fresh orange peel
  • 1 oz crushed coriander seeds
  • 1 tsp gypsum
  • Belgian White liquid yeast

Brown Ale

  • 6 lbs pale malt
  • 1 lb crystal malt
  • 1/4 lb chocolate malt
  • 1/4 lb black patent malt
  • 1/2 oz Willamette hops
  • 1/2 oz Styrian Goldings hops
  • 1 tsp gypsum
  • British Ale liquid yeast

Creating the Mash

Heat a quart of water for every pound of grain you are using. Heat the water to 170 degrees. Add the grain evenly to the water. The temperature will reduce to about 150 degrees. Use a long handled spoon to mix the water and grain thoroughly in a mash tun. Allow the mash to sit for an hour.

Sparging the Mash

Sparging the mash is a method of removing the sugars. The sugars are referred to as wort. Heat two quarts of water for each pound of grain you are using. Allow the sparge water to flow out of the mash tun and into a kettle. It should take about an hour for all of the wort to be removed. You will have about 6 gallons of wort after an hour.

Brewing Your Beer

Boil the wort for about an hour. Add your hops, additives and irish moss to the boiling wort. Allow the wort to cool down. Pour the cooled wort into a fermentation container. Add the yeast. Lock the container and store it in a dark, cool place for 2 weeks. Bottle your all-grain beer.
