Buffalo Steak Marinade

by DoItYourself Staff

It is hard to find a marinade for buffalo steak that stands out from the rest. This marinade does just that, and it is good for about five pounds of Buffalo Steak. There are several ingredients that are needed for the marinade.

• 1 bottle of dark red wine
• 2 or 3 bay leaves
• 1 tablespoon of dry thyme
• A couple juniper berries

After creating the marinade it’s best to allow the Buffalo Steak to sit in it for one to two days. The Buffalo Steak can be grilled, broiled, sautéed, or cooked any other way you would like it to be. However, when cooking the steak remember to only cook it to medium rare or medium at the most. This is because after that point it will become tough.

Properties of Buffalo to Keep in Mind

Buffalo is different from other meat and it has a couple properties that some chefs forget to take into account when cooking a Buffalo Steak. It is important to remember that Buffalo Meat doesn’t contain fat marbling and will cook rather fast. Also it’s important to shave off the fat because it doesn’t have fat marbling.
