There are four grades of steaks. In order they are: prime, choice, select and standard. When purchasing steaks, you will need to choose a grade that will best suit the needs of your intended menu. Some dishes require that meat be fattier for better flavor and juiciness, while others call for a less fatty grade of beef.
You can increase the flavor of meat by letting it age covered, in the refrigerator for a few days before cooking. After the beef has aged, you can marinate it for at least six hours and up to 24. Doing this will increase the tenderness of the steaks.
When cooking steaks, it is recommended to cook them no longer than medium temperature to preserve the maximum amount of flavor. No matter what the cooking method used, it is highly recommended not to turn the steak any more than necessary.
Cooking steaks
There are five basic temperatures that are recognized when cooking steaks:
• Rare - 125°; red
• Medium rare - 130°; reddish pink
• Medium - 145°; rosy pink
• Medium-well - 155°; grayish pink
• Well-done - 170°; light gray
There are several methods for cooking steak. They can be grilled, skillet-fried or seared, or broiled. When you are cooking steaks remove them from the heat prior to the requested doneness. They will continue to cook after being removed from the heat.
