• 1 pound skinless, boneless chicken breast meat - cubed
• One (8 ounce) package rice noodles
• boiling water to cover
• 1 tablespoon peanut oil
• 1 chopped onion
• 1 diced zucchini
• 1/2 cup mushrooms sliced
• 3 tablespoon fish sauce
• 1 tsp green curry paste
• 2 tablespoon of white sugar
• 5 oz can of coconut milk
• 2 tablespoon cilantro chopped
How To Prepare Thai Chicken Stir Fry
Follow the simple steps for preparing the Thai chicken stir fry below and in minutes enjoy a great meal.
• Place rice noodles in a bowl and pour enough boiling water over them to cover; set aside
• Heat oil in large wok or skillet. Cook the onion, zucchini, and mushrooms over medium-high heat until softened; stirring constantly, remove from skillet or wok, reserving oil; set aside
• Place chicken in skillet and cook about 5 minutes or until no longer pink. Add the cooked vegetables, fish sauce, curry paste, and sugar to the skillet. Stir to coat chicken and vegetables with the mixture
• Drain the rice noodles and add to the skillet
• Pour coconut milk in to the skillet and stir to combine.
• Sprinkle with cilantro; serve
