End Grain Cutting Board

All about an End Grain Cutting Board

Old fashioned butcher blocks and cutting boards were all end grain cutting boards.  As with many other items, older is often higher quality than modern cookie cutter designed cutting boards.  End grain cutting boards keep knives from dulling as readily because the blade is able to slip between the wood fibers instead of being crushed.  This also means you won’t see unsightly knife marks on end grain cutting boards.

End grain cutting boards are put together so that the grain runs vertically instead of horizontally.  This allows the grain of the wood to actually separate when cutting on an end grain cutting board and then seal back up once the blade is removed.

Cleaning an end grain cutting board properly is very important.  It is often recommended that you cut raw meats on a separate cutting board than other foods to reduce cross contamination of harmful bacteria.  Clean an end grain cutting board with a diluted bleach solution to ensure it is sanitary.
