When cooking over and open fire, enhance the flavors of your meal by burning certain types of wood. Some woods work better with different cuts of meat, so do a little research before making a selection.
Apple Wood
Apple wood is the preferred choice when cooking pork or chicken on a grill. The smoke generated from burning this type of wood penetrates the meat, brining it with apple and smoky flavors. Apple wood flavored chicken and/or ribs are popular items on barbecue restaurant menus, and using this type of wood will allow you to duplicate these dishes in your backyard.
Oak or Walnut
When it comes to cooking steaks, brisket and other red meats on the grill, select oak or walnut. This wood will produce a smoke and flavor that will enhance the meat and not overpower it.
Maple
