Delicious Lentil Soup
Lentil soup is an easy and cheap dish to prepare. It is also very healthy and tastes delicious! Another great thing about lentil soup is that it is easily kept, and freezes well. It is a very popular dish and can be altered to your taste to make it spicier, or you can add such things as bacon to add more flavors.
How to Prepare Lentil Soup
Before you begin to prepare your lentil soup you will need to gather up the following ingredients:
• 2 tablespoons olive oil
• 1 cup finely chopped onion
• 1/2 cup finely chopped carrot
• 1/2 cup finely chopped celery
• 2 teaspoons kosher salt
• 1 pound lentils, picked and rinsed
• 1 cup peeled and chopped tomatoes
• 2 quarts chicken or vegetable broth
• 1/2 teaspoon freshly ground coriander
• 1/2 teaspoon freshly ground toasted cumin
• 1/2 teaspoon freshly ground grains of paradise
The first thing you need to do in order to prepare your soup is to put the olive oil into a large 6 quart Dutch-oven and set over medium heat. After this is hot you need to add the carrot, onion, celery, and salt and sweat until the onions are translucent. (This should take about 6-7 minutes.) Next add the lentils, tomatoes, coriander, broth, cumin, and grains of paradise and stir to combine everything together. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes. Lastly puree to your preferred consistency and serve immediately.
