Making Ice Cream Sandwiches
Making ice cream recipes is one activity that is sure to draw your kids into the kitchen. One recipe the whole family will love is ice cream sandwiches. It consists of ice cream sandwiched between wafers, cookies or slices of cake. They make an excellent cold dessert that will have everyone at the freezer door constantly. It is not difficult to make this frozen treat. Follow the instructions below to make one big ice cream sandwich with two pieces of chocolate cake. This will make it easy to not only cut and serve, but also to store for use in the future.
Ingredients
- ½ cup unsalted, melted butter
- ½ cup white sugar
- ½ cup all purpose flour
- ¼ cup unsweetened cocoa powder
- 1 egg
- 1 teaspoon vanilla extract
- 4 cups ice cream of your choice
Preparation
Preheat your oven to 350 degrees Fahrenheit. Brush some butter on the inside of a baking pan and line it with parchment paper. Allow 2 inches of paper to hang over the sides of the pan. This will help you lift out the cake when ready. Place the butter and sugar in a bowl and whisk until it is creamy. It is best to use a large bowl as ample space makes it easier to mix all the ingredients well. Add in the egg and vanilla extract and whisk some more. Add the flour and cocoa. Use a wooden spoon to mix until you get a smooth consistency with uniform color.
Pour the batter into the baking pan and spread it out with a spoon. Allow 10 to 15 minutes for the cake to bake. When ready, it should feel dry when touched and you’ll notice the edges pull away from the pan. Remove the cake from the oven when ready. You can cool it on a wire rack. Remove your ice cream from the freezer so that it can soften. This will make it easier to spread on the cake. Once the cake has cooled, hold the paper overhang and lift the cake out of the baking pan. Spread out some plastic wrap on a board and cut the cake in half with a serrated knife.
To Make the Sandwich
Scoop some softened ice cream and smooth onto one half of the cake with a spatula. Try and ensure that the ice cream is evenly spread. This will make it easier to place the other half of cake on top of the ice cream so that you have a level surface. Wrap the sandwich tightly with the plastic wrap and place in the baking pan. Keep in the freezer for 3 to 4 hours or overnight if you prefer.
To serve the frozen treat, remove from the freezer and unwrap. Place on a board or tray. Use a serrated knife to cut the sandwich into the desired number of rectangular pieces.
Storage
You can store for up to 1 week in the freezer. Do not store in the refrigerator as the ice cream will soften and drip. It isn't much fun to eat it this way.
Tips
- It is best to place the cake rack in the middle of the oven where the heat is most balanced.
- Use a larger baking pan if you want several sandwiches. A 10x15-inch baking pan should give you 8 sandwiches.
