Simple Sorbet


Want to impress friends and neighbors at your next barbecue? Whip out a handmade apricot sorbet. Announced with a French trill, "soor-bay" sounds impressive and it'll taste like it took hours to prepare... but here's an easy trick. Take a 16-ounce can of apricots in heavy syrup and freeze it for half a day. Boil the can in water for a minute, then pour the syrup into a food processor. Cut the frozen fruit into small chunks and add them to the processor. Then blend until smooth-add a tablespoon of grated lemon rind for extra zest if desired. Voila-serve it up, or freeze it for later.
