Be sure that the pans chosen for cooktop use are completely flat-bottomed. Check this by using a straight edge, such as a ruler, to establish the shape of the base. Heavier porcelain pans are a better choice than lightweight pans.
Begin cooking by heating the pans slowly. It is not a good idea to begin cooking at a high temperature. Gradually raise the temperature as the food begins to cooking. Use small pots and pans on small burner surfaces and larger cookware on large burner surfaces. All of these practices can help preserve the life of porcelain cookware.
Save energy by turning the burner off early. Porcelain cookware is heat-retentive and pots and pans will remain hot for a few minutes after heat sources are removed. Using a glass cooktop is easy and porcelain cookware is fine to use as long a few simple tips are followed.
