For a buffer dinner, the options are as vast as you like. Try typical American fare with a pasta bar and meat carving station, or do something less traditional and choose your favorite international cuisine. Both Mexican and Indian food have become buffet favorites for budget weddings. A buffet also allows you to cater toward vegan or vegetarian guests by offering selections for them, while not having a completely meat-free reception.
