Condenser fan motor
Can I replace a 1/4 hp 850 rpm motor with a 1/4 1075 rpm motor on my condenser without causing any damage to the compressor?

Yes, but I would do a couple of things... make sure the additional amp draw does not put you over limits, and make sure any wiring below the fan is secured.
The additional airflow will allow the condensor to convert the high pressure gas to a liquid a little faster but I cannot see where that would greatly affect the system. I think it would be negligible.
However, use it only because the correct rpm motor is not available, not because you are saving $$.
