It goes off for a few minutes and then kicks right back on. The air it is blowing is cool. I changed the air filter and can see nothing wrong. What could it be?

Tell us more - yes.
Tell us more about your house.
Tell us about what the temperature is out.
Tell us if a lot of sunlight is coming in the house.
Tell us that if you have to heat your home in the winter, if your furnace has to run a lot to heat the house.
Tell us that if you have a digital thermostat, if you have a swing temperature setting and it it is only set to 1 degree swing which would cause the a/c to cycle more frequently.

SORRY...for not answering sooner. I had a wisdom tooth pulled yesterday. My house was built new in 2000. It has never done what it is doing now. In the past I usually set my thermostat at 73 in the summer and have no problems. For the past couple of weeks do to it staying on almost constantly I keep it at 76 & 77. I have a Bryant AC Unit with a digital thermostat if that helps. I live in KY and the temp is averaging around 91 lately. Also when I first started my AC unit up in the spring my inside coils froze up. Mattison, both the indoor and outdoor units go off and on at the same time. THANKS

Did I read that right?
You need to call a qualified technician to diagnose the problem. If it's low on refrigerant, there is a leak which must be repaired.
It is illegal to purchase and handle refrigerants without the proper license.

You don't want to just go adding refrigerant. Besides the EPA regulations mentioned you could very well overcharge the system and damage the compressor.
Freezing up is an issue if it continuassly does it. You need to check the indoor coil for frost/ice. If frosted/iced over and the coil and filter are clean you should call for service.
As for the unit shutting down even if you was low on refrigerant or freezing over and if you had a low pressure cut off on the condensor it would only shut off the outdoor section. Not both indoor and outdoor. You can try taking the t-stat off the wall and jumping R+Y+G and see if it continues to run "make sure you turn the power off when you do this". If it runs normal then you have a t-stat issue.
