Air conditioner not working right

Wanted to get some opinions about home air conditioner and what might be going on and whether it's something that's repairable or if a bad sign that it's time to replace.

I live in Florida, 2700 sq ft home. The AC unit is a 5 ton outside package unit.
The unit is exactly 10 years old. I've always wondered if that is too much of an AC unit for our home and if when the time came to replace , we'd be better off with some kind of split system, but I guess that's another matter. The mfgr is Goettl. I never heard of them until owning our home, but always wondered if their systems were as good as the more popular ones that I've heard of.

Anyway, the last week we've had temps in the low 90's. During the hottest part of the day, the AC Unit won't get down below (79-81). Further, when it's really running a lot mid-day, it seems like it will shut off the compressor, but not turn off fan. Then fan will continue to run and it will unsuccessfully try to turn back on a few times. This noise caught my attention and made me think something might happen to tear up the compressor. The last 2 days I've really been watching it and have pretty much been manually turning off AC for 15 mins every hour during mid day, and it hasn't shown the issue, but also it's still not cooling below 79-81 during mid-day. In previous years could get down to 74 or 75 on summer days with seemingly no issues.

have the unit serviced! Condenser coil is likely dirty/plugged.

Find the delta-T (the temperature difference between cold register air and return air) and also both outside pipe's temp (are they hot, cold or warm ?)
