Dry Charge Install

Hey guys,
I know how to do a full install of a factory charged a/c, however, I only put in a couple of dry charged units and feel like I'm forgetting something. My question is: What's the best practice for evacuating a dry charged unit/removing the nitrogen? Do I weld in the line set, open the valves and pump down the entire system and let the vacuum pump get the nitrogen out? I know you NEVER want to attempt to run a compressor while in a vacuum but is pulling a vacuum on the compressor while it's off potentially damaging as well? Like I said, install of a condenser with a factory charge is no big deal I just feel like there's an extra step I'm not remembering when dealing with the dry units. Any help is much appreciated. Thanks.
