Defrost termination / fan delay switch

I have a box thatís 64f. How long should it take for the fans to cut in. This switch is a 35f switch, but itís attached to the end housing not the U bend. Itís a Trenton walk-in freezer.

That would depend on the model of the switch.
It should activate at 35 allowing the coil to start chilling before the fan restarts.

I waited almost 30 minutes and it was all frosted =32f so I called it junk, ordered another, tested it in icewater before installing, and I was surprised it took about 8-10 minutes. Today, I put it in, returned from coffee and the box was 32 and the fans were running. Im thinking, under normal circumstances, the coldness of the walk-in freezer will speed up that time VS doing this from a hot pull down of 75F.

Yes...the cold box will speed the process up.
