There are lots of techniques. Here's my favorite.
(1) Screw a 2x2 along the joists, parallel to, and on either side of the obstruction.
(2) Attach 1/2" sheathing (e.g., plywood or OSB) to the outsides of the 2x2s, hanging down far enough to clear the obstruction by about 2 inches.
(3) Attach a 2x4 to the bottom edge of each sheathing (the only purpose of this is to provide a surface for attaching drywall).
(4) Attach 2x4s, 16" on center, on their sides, horizontally between the 2x4s at the bottom of the sheathing.
You can use 2x4s on their sides if the area to be spanned is no more than 4 feet. Use 2x4s on edge for longer spans (making the sheathing an extra 2" wider).
