I have an old (50+ years) one and one-half story house. Last year the tenant let an ember from burning leaves catch pine straw in the gutters on fire, which then raced into the attic. I'll have to rebuild the upstairs rooms, but most of the structural lumber and roof decking is only smoked or lightly charred since fire department response was quick. What's the best way to remove the smell and to cover the wood? What products are best and what method of application?

A paint type product is made just for your purpose. It has a smoke eradicator in it. Most Home improvement stores will have it in their paint sections.
