converting flat ceiling to open truss look

I have a soundly built ranch style home vacation home that I want to give a more airy look to by taking down the ceiling to expose the roof trusses in the small space above the ceiling. Would it be correct to state that I am safe doing this structurally as long as I do not tinker at all with the struts and rafters holding up the roof? My plan is to put up a vapor barrier and foam insulation between the struts to replace the rolled fiberglass stuff that is now sitting atop the ceiling. Maybe even add some skylights for natural light.

Thumbs down Huge expensive JOB !!

This will require re-engineering the entire roof and cost thousands
The ceiling joists are just as important stucturally as the rafters.
If you want some natural light try using solartubes

Actually, you have either rafters and joists or trusses, not both. Either way they will be an unpleasant sight, composed of framing stock. Exposed framing only works in timber frame homes, not ranches.
