Water system- temperature very high

I have a water heat system and a boiler. The rads are all bled and the pressure is about 100KPA. When the boiler switches on, though, the temperature of the water being circulated gets pretty high - over 100 deg c.

What must I do to stop it going this high?

Water temperature

Is this 100+ C actually measured with an independent thermometer or are you trusting the gauge on the boiler? Boiler gauges are notorious for being inaccurate. I suggest buying an electronic thermometer with a remote probe. Put the probe against the main supply pipe coming off of the boiler & insuate it well with foam pipe insulation, fiberglass, or even a towel wrapped several times around the pipe & probe. These thermometers are fairly inexpensive and are available at electronics stores & some home centers.
