venting boiler exhaust

My newer Burnham 160,000 BTU boiler is curretnly vented through a 3 flue channel chimney. The boiler uses only one channel. and the rest are empty. I would LOVE to tear the chimney down, and use some sort of lined metal exhaust pipe instead, so I can use the space of the brick chimney for something else. What kind of trade is best suited for the re-venting? a plumber?
I want to call the right people, and have it done right

Venting boiler

If the boiler is oil fired you would need an "all fuel", triple walled chimney. If gas fired, type "B" vent is normally used. Some plumbers don't like cutting the roof while others don't mind.
