Is this air handler also used for A/C? If it is straight heat & the aquastat will handle the load, you can by-pass any relays & as was told to you, simply wire the fan thru the aquastat. I usually put the aquastat on the coil discharge & set the fan to come on when the discharge reaches about 140º. You may have to play with the setting depending upon air temp from the registers. Here's a zone valve wiring diagram:

A/c
You would have to wire the aquastat thru the normally closed side of the fan relay, presuming a SPDT relay which may or may not be the case. I also presume the fan is 240 volts with one leg being hot all the time. A wiring diagram of the air handler would be a big help. If you can take a picture of it, the photo can be posted on photobucket.com or similar photo sharing site & a link posted here.
