Like to Disconnect Indirect hot water Heater from Boiler temporarily

Hi,
I have small commercial property which is not in used having Hyraunic Baseboard system for heating and Indirect water tank for hot water.
Thought property is not used, I have no choice but keeping system running at 55 degree minimum since basement has three water meter feeding
to unit itself and other two unit next to it. I do not need hot water in Unit since it is not used and I want to tempoparirily disconnect it.
How do I do it ?. It is operated with extra Honey Well Zone valve.

I thinking of doing below and please correct me:
1) Turn off Cold Water shut off valve Incoming to Indirect Tank.
2) Empty Indirect Tank
3) Turn Termostat to 0 temp.
4) Remove Thermostat wire connected to Zone Valve. I know it is not necessary
but I am thinking it will give extra insurance for not calling heat.
