What mix to use?

Continuing the "Concrete, Brick, Stone steps?" thread, we (or rather, I ) have decided to go ahead with poured concrete faced with faux stone: (http://www.alluriam.com/brochure_pg_15.htm ) and I have gotten to this point:

I've run into a bit of a problem. See this detail:

I'm going to need to level out the "old" fake stone and bring the top 10-12" or so of the concrete block to the same level (which would be about a 2" thick layer slathered on there.) I *tried* chipping the old "stone" off and it ain't coming! I just hope I can get the new stuff to stick that well! What mix of "mud" should I use for this application? I'm assuming a bit different from just plain pre-mix morter mix? Can I get away with "richening" it a bit with some Portland and throwing some latex additive in it for good measure? I would like to get this done this week as we are planning on pouring the steps this coming weekend. Thanks!

You choose a beautiful stone! I am sure you will do a great job.

I suggest you to read installation brochures of Cultured Stone at

http://www.culturedstone.com/ (go to technical info),

you will get interesting details. To apply the stone, the manufacturers recommend a Type N mortar.
