Cutting Bricks?

Dear DIY, I recently had my 24x25 Garage pad poored. My slab is 5.5" thick with 29" wide x 18" deep footing beneath slab (there is a lot of clay in the area that I needed to build for). I had 16 cubic meters (21 cubic yards) of 30MPA with 4-7% air and fiber mesh in my concrete. On the day of the poor, we had a daytime high of 29 degrees C (84 degrees F) and the day after we had a daytime high of 25 degrees C (77 degrees F). It has been a little cooler ever since. The pour started at 8:45AM and ended at about 11:00AM on June 28th. The finisher power trowled later on that afternoon. The slab was rebared with 15mm rebar on 16" centers and the footings had 4 rebar lines running 3 inches from its four corners. We kept the concrete reasonably damp after it could handle the surface moisture, but despite this it was radiating quite a bit of heat a few hours after the power troweling. We also applied cure-and-seal shortly after the power troweling. The concrete was kept moist most of that day, and the next morning. I applied another coat of cure-and-seal the next evening as recommended by the finisher, and I watered down the concrete with a sprinkler 2.5 hours after applying the seal. The next morning (48 hours after pour), I watered down the concrete and immediately tarped it over (I probably should have done this the day before too). I have been keeping it reasonably moist ever since, and I have not yet removed the forms. 24 hours after the pour, I noticed two cracks in the concrete. They are hairline, and after applying the seal on them, I cannot feel the cracks at all with my fingers. I am tempted to apply many other coats of seal to prevent pitting in the future. I am trying to figure out what is going on here, and trying to figure out what actions can be taken to protect the finish and assess how the overall strength of the slab has been impacted. I bought All Star concrete mix (a product of Qwikrete) to use for shed footings. I used 3 bags and mixed water in per instructions and poured an 8" diameter footing. The mixture looked and poured differently than what I was used to from a redimix truck. The aggregate was very small, even the color looked different, it looked like wet sand. The next day I picked up a chunk of left over cement that appeared dry and could crush the whole chunk into sand with my fingers. The leftover truck redimix concrete I poured was so hard it clinked when hit with a shovel. Is this cement going harden more and be strong enough for me to drill into without crumbling? Would I be better off making the mixture myself with proper ingredients and if so what would a good mixture be? The only other info on the bag was what to use the mix for. No info on the psi, % mix of ingredients, etc. It was on sale at Menards for only $1.98 for 60#. Did I get what I paid for? Any advice would be appreciated.
