Those look good. Every one has their own formula. For small jobs, I just use prebagged Type S Mortar, for larger ones I use this:
Scratch/Brown:
1 part Masonry
1/2 part Portland
3 parts Sand, by volume to the amount of cementious material. That is:
1 bag Masonry Cement (1 CuFt)
1/2 bag Portland Cement (1/2 CuFt)
4-1/2 5 gallon buckets of sand (4-1/2 CuFt)
Finish coat:
1 part Portland
1/2 part Type S lime (Puttied for slick finishes)
2-3 part sand by volume of cementious materials, depending upon finish.
