Enlose Stone Wall Patio

We want to enclose outdoor patio. We have beautiful natural stone Pillars, which are not plumb. From top to bottom there is a difference of 1 inch. The Bi-fold doors we want to install requires plumb surface. How do we make the stone pillar ever from top to bottom? Thank you.

How much distance is between the pillars? what size doors? will doors be exposed to the elements?

We have 5 different openings the largest distance between pillars is 14 feet.
Height for 4 of them is 8'7" the distance between pillars are 13', 9', 6'5" and 5'. One opening is more like a window H5'4"W6'5".
The 14 feet span will have 5 Panels that will fold on either ends (2 &3)
These opening are big, the doors are heavy and don't know if filling stones with Cement / Stucco can provide the structural support and take the lateral load.
I would like to use Nanawall Bifold doors, they can withold wind and elements well.
