I want to rip out all my carpet and vinyl floor covering.
I would like to just clean and seal the slab like you see
in some restaurants. What type of product should I use
and what is the proper process?

Commercial grade sealers can be obtained from a concrete supplier. A stainless steel garden sprayer is used for application. These sealers will dissolve plastic parts and zinc plating will be carried to the surface if a lessor quality sprayer is used. Throw the sprayer away afterward. It's not worth the time money and effort to clean it.

Remove the carpet and pad, repair the holes from the tack strip by dry sacking or use concrete patch. Wait two weeks. Clean the slab: acid etch the surface; then repeatedly mop it multiple times until the water is clear. For acid etching see the Doityourself.com how to pages.

concrete stain

I think you're referring to floors that have been stained
with concrete stain, then sealed. I suggest you check out the http://www.acid-stain.com website. It's very helpful and can answer a lot of questions; the site is maintained by professionals in that field. When properly applied (yes, you can do it yourself) the acid stains topped by a good sealer can be beautiful. Good luck!
