Question What do I use to fill this gap

Just curious how I go about filling these gaps. Huge noob when it comes to home DIY projects, so more details are awesome.

Is that mortar or some type of caulk in the joint already? If it's mortar you can fill the gap with more mortar.

Placing a temporary form across the bottom of the opening will enable you to dry-pack mortar in from the front and top, without loose mortar falling out at the bottom. Slightly moisten the bonding surfaces (existing mortar and concrete/stone) and then let them almost-dry before packing the mortar in. Don't mix it too wet, or it won't have enough strength and durability. I'd use a narrow margin trowel or narrow putty knife to firmly push the mortar into the opening. Don't overwork it, but let it slightly set before giving the exposed surfaces a "smooth-over" with a moist paint brush.
