Should I remove ALL traces of varnish by sanding w/hand held orbit sander on medium grit before finishing w/polyurethane?

True butcher block, if used for that purpose, should not have and should not be finisshed with poly. Use the ROS with 150 grit and wipe clean. I'd simply apply mineral oil or "butcher block" oil.
If you really use if as a cutting board, poly will simply flake off into your prepared food.

true butcher block
It was a soup table in a deli w/varnish finish-but I would love to use it for food prep. I have another smaller one to varnish to set microwave,etc. on-I am just going by the instructions on the back of the block that says to sand, etc. using marine quality varnish-but I truly would love the "glow" of the wood w/oil-mineral oil is toxic, so I hear

If you read the labels, you'll find that "butcher block" or cutting board oil is just good old mineral oil available at any drug store.
Definitely do not use anything else on wood you use for food preparation.

Since your block will be ornamental and not used for chopping/cutting, you can certainly sand and finish with a polyurethane. Use an oil base poly. In lieu of brushing on a thick coat of satin poly may I suggest you get some wiping poly and apply with a soft cloth. Since it's a thin coating it may take three or four coats, sanding lightly between coats with 300 grit.

White mineral oil from the pharmacy is non-toxic. One of its uses is that it can be taken internally as a laxative.
Is it really appropriate to talk about things that are Laxatives? I believe talking out of text, especially something that has NOTHING to do with woodworking is inappropriate conduct in these chat rooms. Thank you

No big deal Mike,
Patricia was only conveying that mineral oil is certainly non-toxic and safe to use on bb.
What's even worse and more useless are quotes. I rather learn something once that maybe I didn't know than to have to read a carbon copy of what I have already read.
