Sealing Beams

I am converting a room and the house and need some advice on sealing old oak beams.

The room has got many old oak beams around the outside running from floor to ceiling. I plan to infill between the beams with plaster but before doing so I want to coat the wooden beams with something to seal them so the dust doesn't continue to come out.

What do you suggest?

What kind of "dust" is coming from those beams? If it's dirt, the beams should be cleaned before you seal them. If it's sawdust, however, you may have a termite problem that should be fixed before you get too far into any finish work.
