Tounge and groove ceiling ?

We are planning on installing an Aspen tounge and groove ceiling. We plan on applying several coats of polyurathane and are debating weather it nessecary to treat both sides of the aspen panels? I have read that "back priming" is needed to prevent h2o vapors from blistering the ceiling surface. Dont know if it makes a difference but we are installing the ceiling directly over new spayed in icynene insulation. Any advice or tips are greatly welcomed. Thanks very much

Sealing all sides/edges, reduces the chances of the wood from curling or warping due to moisture on an unfinished side.
