level wall

I bought a new property and removed the paneling above the fireplace. The wall is uneven with the face of the brick fireplace. What matteral should I use to level the wall?

Walls are plumb, floors are level, but I am nitpicking.

It depends on what you need. If the studs are not in a line and you only have 1/2(drywall) of space, run a string across the wall at 1' increments and shim as needed to fill in voids with cedar shims. Nail the shims in place. If you have a lot of space, install furring strips shimmed the same way.
