Big Six Money Wheel Table?

I am building yet another gambing table for our school. This time it is a table that will go with a "Big Six" or "money wheel". We do this so we dont have to rent same during our frequent Vegas parties we put on to raise money. You'll see one of these table/wheel ensembles in virtually every casino. It's typically a very ornate, 60" wheel with real money encased in the wheel and, a table in front of the wheel where wagers are placed. The dealer stands between the wheen and the table.

My question is on the table (I will rent the wheel). It's a fairly simple design. Basically, it's nothing more than a 7' x 3.5' solid, 3/4 inch plywood covered with padded underliner and then a custom-made layout for the wagers. A padded foam rail will cover 3 sides of the table (not the dealer).

I want it to replicate a casino table as much as possible where players can either stand or sit on stools around the table while playing. Thus, the table has to be the proper height to accomodate both, very much like a stand up blackjack table.

1. How tall should this table be?

2. Ideally, I would like to use folding legs for easy transport and storage but would consider other options. Any suggestions and links regading legs would be greatly appreciated.
