gap in door trim

putting up horizontal trim above the door with 1/4" gaps
is it ok to just caulk and paint this or is there a better way?

I'm guessing that the side trim is tipping like that because your door jambs are protruding past the surface of the wall? If that's the case, you would probably be better off removing any trim you already have installed, then take a hand plane, electric planer, and/or a belt sander to the door jamb, and try to scribe the jamb to the wall. That way your casing will lay flat on the wall without tipping and causing those unsightly gaps. The reveal where the side trim meets the head trim should be straight, not angled.

yes it is, I knew grinding down would be an option but thought caulking would be quicker.. grinding is the way to go
using belt sander

It's quicker but won't make it look much better.

I've fixed a lot of carpenter mistakes [or lack of skill] over the years but you can't fix crooked with caulk. It might not look as bad once it's caulked and painted but it will still be crooked!

That's the way it looks to me, Larry. Its your house but I'd definitely fix it if it was mine. I don't like to caulk anything more than 1/16" if I can help it.
