How to Clean Ceramic Plates?

I work at a restaurant and we have lots of white ceramic plates. Over time they kind of get darkened from grime and/or grease. It somewhat rubs off when scrubbed vigorously so I assume a chemical could strip the muck off. Any suggestions on what to use?

Some of the muck appears to have entered into the pours of the ceramic and is therefor difficult to rub off.

Ceramic glaze that is porous or crazed on plates harbor bacteria. Moisture can enter pores and crazing and cause mold and mildew to darken affected areas. The openings in the glaze will also harbor bacteria.

Washing plates in hot water with degreasing detergent and a scrubbie should remove any buildup. Nothing will remove stains that are beneath glaze. Plates with defective glaze should be discarded.
