How quick is quick set cement/mortar?

I am planning to rebuild a shed/lean-to, and need to set four 4X4 posts in sandy soil in south Florida. The posts will be buried 18" deep, with some sort of quick set concrete.

However, I understand these concrete requires 24-48 hours to set? I can't wait around and would like to set those posts, and quickly continue with the construction with attaching other parts of the structures to these posts while they are still setting.

Are there any sort of concrete mix I can use that is suited for this application? Something that would set very quickly so I don't have to wait for it to set before I can put any load on it?

Quikrete 50 lb. Fast-Setting Concrete Mix-100450 - The Home Depot

Hand sets in 40 minutes, but I wouldn't put a lot of stress on it for a few hours. Pour it dry in the hole and add water and chug it with a steel rod to dissipate the water into the mix.
