Deck step stringers

I'm completely re-doing the steps on my deck. (29" total height)

After cutting in the treads, what's the minimum amount of material I should have left in the stringers? I'm on the borderline between buying 2 X 10's and 2 X 12's, but don't want to make them unsafe.

Stringers

I always use 2x12's for stair stringers.

Yes, you ALWAYS use 2x12s.
