Recovering Linoleum (New plastic laminate over old on countertop)

My wife and I are just starting out together in a new, but not very updated, house. I have seen formica sheets at the hardware store and was wondering if it was common to recover old formica countertops. If so, how difficult is this?
Our kitchen has a significant amount of counter space, so ordering new countertops is cost prohibitive at this point.

Has anyone ever done this? Is it feasible or recommended? How difficult?

This post said linoleum earlier. I meant formica. I was typing counter top and thinking floor. My apologies.
