removing soffits

I want to redo kitchen- there are 2 soffits with nothing really in them in the old kitchen- I want to remove them to put taller cabinets in. is it easier to take them out and drywalljust that section or drywall the whole ceiling again?

I can't see a reason to drywall the whole ceiling.

Is that an HVAC vent in the soffit? It's not uncommon to hide electrical, plumbing and ductwork in soffits. You can still remove the soffit but relocating stuff will add to the cost of the project.

I agree. The soffits are there for a reason. 1) no room above for the facilities or 2) lazy contractors. You'll have to do exploratory surgery to see what is all contained in the soffits to see if it is a doable thing.
