How can I build a simple outdoor non-enclosed shower for our swimming guests using the existing water faucet? I'm not worried about waterdraining since it would overflow into the flower beds. What type of shower head and pipe tubing shall I use so that it doesn't rust?

Use copper tubing. None of the shower heads on the market should rust, most are plastic anyway.

I would simply put a "Y" (double cut-off faucets) on the spigot, attach a length of cut-off garden hose with a shower arm hose-clamped in the end (screw a showerhead on the end of the arm). Hang it on the wall.
Easy. Inexpensive. And you still have one side of your spigot for regular watering.
Or, use pvc white plastic. Easier to work with than copper, and also less expensive.
