Sealing Butcher Block Counter - Issue

I am installing butcherblock countertops and would like to use food safe mineral oil on the top surface. What about the bottom? I have read that the bottom must be sealed also, but if I apply oil, I can never re-apply it to the bottom once they are installed. Can I use Polyurethane on the bottom and oil on the top, or will that cause a problem from the 'unequal' finish types?

Luckily the bottom side of the counter doesn't get regularly cleaned removing the oil. I would use oil only and not try coating the bottom with poly.

Personally, I would use oil based poly instead of oil but, as Dane stated, the same finish on all sides is fine.
