faucet change

Is it possible to change from a one-lever faucet to a two-lever without changing the sink? i.e., does the one-lever faucet actually cover up three holes?

Yes. (Just look under your bathroom sink faucet. A single-lever will have the water tubes coming down through the middle hole, and bolts through the two side holes.)
Just shop for a double-handle lavatory faucet of your choice, and follow the installation directions that come with it.
