Finishing out a door opening

I recently removed two interior doors when I added a wall, but I am leaving the doorway openings. I have put sheetrock up on the sides and top, and am looking for the best way to finish. I am considering paper-faced corner bead, then mud, sand, and paint. This seems like it might be the simplest, and I think it would look fine. Is there a better way? Thanks for all your help.

Since these are corners, use metal corner beads. Paper won't tolerate the bumping that is bound to happen.

Another option would be to case and trim the openings with wood or MDF. What style you use depends on what's in the rest of the house.

There are a couple of other doorways that appear to be finished the same way, with corner bead. Thanks!
