Prehung Doors

I'm installing some in my basement. I roughed
the opening according to specs on the doors,
but there's still at least an inch on each side
when I insert the door into the opening.

What's the best way to install these? Any
step by step instructions?

as a rule of thumb, rough openings only need to be 1" bigger than the door jamb itself. If the door is 33 1/2 x 81, the rough opening should be 34 1/2 x 82. If your rough openings are as big as you say, I would add 1/2" plywood to each side to reduce the gap down to 1/2". Keep the door centered in the opening when you shim it, and you shouldn't have any trouble getting the casing to cover.
