Door and garage door trim
In installing door and garage door trim on a structure with T1-11 plywood siding, does it matter if the trim is installed over the siding versus on the studs with the siding butting up to it?

You trim is best installed first and it is nailed to the sheathing/studs and the jamb. A drip cap is installed over the top piece of trim, and then the siding is installed around the trim.
The only exception might be a structure where the siding IS the sheathing. If that's the case, then your trim would likely go on top of the siding. You'd still want to ensure you have a drip cap that goes behind the siding on top, though. Rather than using a 1 1/4" drip cap over the brickmould you'd need a 1 3/4" drip cap, due to the extra thickness of the siding. And you'd have to install a strip of siding below the drip cap to shim the door out to the right level.
