other than looks, what purpose does or did a window stool serve?

The stool serves as somewhat of a stop to hide the gap where the window closes although a strip of wood can serve the same purpose. IMO using a stool looks best although picture framing the window with casing is also an option and is quicker/easier.

And depending on wall thickness and such...it's a flat place to put plants and nick-nacks.

Nothing structural. Without some type of molding to hide the gap where the window closes - you're relying solely on the weatherstripping to seal the window.

It also gives blinds a place to rest when they are extended down. I'm looking at our 2" blinds and they would be out of place without the stool there. But like my cat.....no real purpose in life.
