Question

I have a couple of doors that do not stay fully closed (when not latched) or fully open when set to the wall. They seem to slowly drift to the middle. This is very annoying. How do you determine whether to shim the hinge, move it foeward or backward or even set it deeper?

That sounds like you are fighting two problems. The wall isn't plumb (leaning in the direction that the door swings to open), AND the hinge side of the jamb isn't plumb (leaning towrds the latch side of the door). You might be able to mortise the top hinge into the jamb a little more, and either move the top hinge in towards the door stop or the bottom hinge out away from the door stop to correct the situation. Or, you might have to pop the casing off of both sides and plumb the jamb in both directions.
