Roller won't stay in the track
The hinge is very often jumping out of the hole on the sliding kitchen door. Is it different types of hinges

I changed the title. That's called a roller. It should be spring loaded to hold it up. It looks like your door needs to be raised a bit at the lower hinge point.
Is that the end of the door that is the hinge or the end that moves ?
Can you give us a second picture of the bottom of the door.... directly below that.

What does the angle of the hinge side look like? Is it angled downward with the top wider gapped than the bottom? If so, a correction of that angle will help keep this roller where it should be.

As Larry mentioned, check the door to see how plumb it is when it is closed. Make the door hang just as straight as the jamb is, either by moving the bottom pivot to the left, or the top pivot to the right. Either of those adjustments will raise the leading edge roller slightly. You can also turn the bottom pivot and make it longer to raise the door, which might also help some.

Looks like it definitely needs to be raised up. Take a couple dinner knives from the kitchen and slide them under the middle of each door to raise them up so you can work on it. Once you can get your fingers under there, shove the knife all the way under. If you have something a little thicker to stick under the doors, it will make it easier to turn the hinge pivot down.

Should be a adjustment on the pivot end at the floor. I usually pop door out and make a few turns on adjustment and retry.
