New Interior French Doors

I have some door openings - all finished with drywall - that I'd like to install french doors into. The openings, framed as doorways, but finished with drywall on the jambs (no doors/frames/jambs were ever put in).
Do I need to remove the drywall where the door frames will go or can I fasten the frame/jamb (is there a difference) straight through the drywall into the studs?
If not - what would the best way to remove the drywall?

Typically to do the job right you should remove the drywall on the jambs only and set the door in then trim the edges and top of the door with door casing(trim). To remove the drywall just use a razor knife and score it many times in the corner neatly. It doesn't have to be perfect because you are going to cover it up with trim.
